Smore’s Brownies

IMG_3851Ok so a lot of things I make are completely from scatch but that doesn’t mean I don’t cheat sometimes. Now I like brownies but there not my favorite thing, BUT these were pretty amazing not going to lie. The nice thing about these are that if you are going to bake for holiday party, you kids birthday or so on, even though they aren’t completely homemade 1. no one has to know & 2. atleast you added a little special twist to the normal brownie to make them even better and 3. way better then just buying something already made at the store or just bringing brownies that are clearly straight from the box mix. A little effort can go a long way.

What do you need?

DARK chocolate brownie mix (dark chocolate comes out wayyyy better then any other kind) Semisweet chocolate morsels Mini Marshmallows, graham crackers, butter & sugar

How do you make these?

First make the graham cracker crust.  It’s really simple. Crush up 1-1/2 cups (24 squares) of graham crackers. If you put it in a zip lock you  can easily crush them.  Melt 1/3 cup butter, then in a small bowl mix the graham crackers, melted butter and 1/4 cup sugar. After spraying the brownie pan press the graham cracker crust into the pan with not too much pressure.  You can decide however thick you would like your crust to be.  I then put the pan in the over that should be preheated to 325-350 (whatever the brownie box says) for 2-3.

Make the brownies how you would make any other brownies.  I personally like my brownies to be kinda gooey so I normally put the brownies in about 7-10 minutes less check on them with a toothpick & decide how much longer they really need. I take them out when there still gooey but the edges are more cooked.  Pour the brownie mix over the graham cracker & cook.

Once you take them out throw on the chocolate chip morsels all over the top.  They will probably start melting right away because of the heat.  Then I topped them with mini marshmallows & threw the pan back in the oven on broil until they were brown.  BE CAREFUL & WATCH them because they can burn very easily. You can use big marshmallows if you would like.  I hope you enjoy these as much as I did.IMG_3832

Eating my way through the Greek Islands

For spring break we decided to goto Greece.  We went with a company called Bus2alps which is all kids our age from programs like ours.  We didn’t fly at all so the trip was cheaper.  In a later post I will touch on all the fun adventures we got to experience but this post is alllll about FOOOOD.

Now I thought I loved Greek food which I do, but now it is kinda ruined for me in America. It was so amazing.  We were in Corfu, Athens and Santorini. While we were there we tried many different foods.  Some I have had before & some I had not.

Let me start with these coconut sticks we had in Athens.  Now I am a true lover of coconut so when I saw these I had to get them.  You could get chocolate or vanilla or both so I got both so I could test them both out.  Now my food buddy/best friend isn’t a coconut lover but I of course let her have one & she instantly fell in love with these.  We went back and got more with our other friends & to this day we talk about them.  (We actually googled them to order them to America, that good)

My food buddy tried the roasted chestnuts because she had never had them before & she thought they were great.  The lady working the stand was the nicest women ever & we sat and talked with her for at least 15 minutes. IMG_3790 IMG_3793While walking around the first morning we had got there we saw a bagel like ring.  We had not had bagels in months & they told us this was some popular in Greece so we tried them.  They have different flavors just like bagels too.  The bakery we got them from smelled amazing & they had so many great looking pastries.  We got a couple to try which were amazing as well.SAM_1461 SAM_1462 IMG_3759Another thing we had in Athens was some fresh fruit.  They were set up in the square right by the corn & coconut stands. SAM_1472At the end of our trip we went back to Athens for a half day before we left.  We found this frozen yogurt place & we had to have it.  We had been living on gelato for a while & needed a mini change for the day.IMG_3776In Fira, Santorini right by our hotel was this teeny tiny restaurant that made waffles. I am 100 percent a sweet breakfast person so this was perfect.  I had a different “spiltzies” buddy for this meal. We split 2 waffles one chocolate type & a apples & honey one.  The chocolate one was better but they were both amazing, clearly but the looks our our plate. My friends got a fruit crepe with honey that she loved!IMG_3667 IMG_3679 IMG_3672 IMG_3682392667_10151342846971039_410246275_nWhile in Santorini we of course had to split a gyro sandwich late night (drunk)388732_10151591453246800_1873896920_nThe best meal we had while in Greece was in Santorini.  It was at Mamas House & mama is the nicest, cutest women & we loved her. We had fried tomato balls which were amazing. My friend got a salad for her appetizer. My friend & I split the most amazing octopus I have ever tasted in my life.  It was perfectly cooked & was just plain amazing. Now the other food might not look amazing but it really was.  I split a traditional Greek dish which is Mousaka & chicken with plums which was out of this world.  We kept talking about this dish for a while. Lastly for dessert we got Baklava. SPRINKLE CAKE

IMG_5892Asides from the birthday cupcakes I made for my sister that you can see on the prior posts I made her a sprinkle cake.  Now it was a lot simpler then I thought it would be but my mistake was I didn’t think I would have enough time to make it for her the day before so I made it 2 days in advance.  The cake is actually quick & easy to make once it is baked so you will most definitely have time right before presenting the cake.

To make this cake you need: funfetti, frosting, round rainbow sprinkles

After baking the cake let it cool.  If it is layered frost the layers together.  You can also frost a crumb coat if you would like.  I did. After the crumb coast I put the cake in the fridge for a little.  (Now I baked my cakes in disposal pans cause I couldnt find the size I wanted. This did not help the evenness of the cake so it did not come out as perfectly as I would of liked)

While the cake was in the fridge I emptied almost all the sprinkles into a pan.  Make sure it is kinda deep so the sprinkles dont bounce out everywhere.

I then frosted the SIDES of the cake as perfectly as I could. DO NOT frost the top of the cake yet.  Then pick up the cake by holding the top & bottom & roll the cake in the sprinkles. Then I put a bowl in the sprinkle pan & sat the cake on top of it.  I then used a spoon to put all the sprinkles of the top.  Then done, pretty easy isn’t it?

The problem with my cake was after a few days the dye of the sprinkles leaked. But below is a picture on the day it was made.  I do have to admit though, that if all the dye leaked equally the cake would of looked pretty sick. IMG_5891IMG_6109 IMG_6121 IMG_6110 IMG_6111the cake was sooo good though we had to throw it away or we would of finished it

High Heel Cupcakes

IMG_5953Well it was my sisters 25th birthday so like every year I had to come up with some cool cake for her.  I did make her a cake too but this post is about her cupcakes. She LOOVES fashion & every girl who loves fashion loves shoes so I made her high heel cupcakes.

To make these I used: funfetti cake mix, graham crackers, white chocolate melts, colored sprinkle, decorating gel, colorful cupcake holders, homemade vanilla frosting, hazelnut piroulines,

First I baked some cupcakes & let them cool down.  As that was happening I cut the hazelnut piroulines on a diagonal & the  graham crackers as you can see below. I cut them on a diagonal (they dont need to be perfect) then i melted the white chocolate & dipped the graham crackers in them. I used a knife to spread the white chocolate out. * if the white chocolate in the bowl starts to harden just put it in the microwave again to melt it. Once that dried i took some of the frosting gel & lined the edges & then dipped the sides into sprinkles I put on a plate. After that was done I made some vanilla frosting which I dyed different colors, frosted the cupcakes & designed however.

Making these next time I would do it a little differently.  I would place the graham cracker in first to see how they should be placed in & then spoon some cupcake away.IMG_5911

Once you take some of the cupcake away you place the graham cracker into the cupcake & at the same time dip the edge of the hazelnut pirouline into some white chocolate & stick it to the graham cracker to hold it up.  Hold it there for a second til it dries & DONE. To decorate the shoes more I made some fondant bows.  Now this was my first time making these so I learned my lessons & would be able to do them better next time.  My advice do a few cupcakes fully through & then go back to the rest & do those.  You can then learn from your mistakes & have most of the cupcakes turn out wonderful.  (So bake all the cupcakes & separate the few when it gets to the spooning out some cupcake step)

CHIPOTLE BURRITO CAKE

My dads two favorite things Chipotle & Cake. So I made my dad a Chipotle Cake.

To make this cake you need: Cake Mix, Frosting (I made chocolate & cream cheese frosting, recipes not added yet), pie crust, fondant (make or buy), food coloring, shredded coconut & raisins.

For some cakes I use box mix & some Ill make myself.  I was already going to be spending time on decorating & was pretty busy with school work so I decided to go with box mix.  For the decorations you do not need to use the exact things as me.  You can make some components in many different ways.

To begin I baked a few cupcakes & 2 rectangular cakes in throw away pans.  I made two because I was 1. unsure if I would make a mistake & need a back up or 2. make it a layer cake.  (I ended up throwing the second cake away, but this was all from 1 box cake mix.)IMG_5393When they came out I let them cool then put the cake not cupcakes in the fridge/freezer to make it easier to shape. I made the chocolate frosting in the meantime.  After the were in the fridge for a while I shaped the cake using a  serrated knife.  I curved the edges & sides like a burrito looks. Below shows you what I did to begin & how it looked more to the end.  I did carve more after the picture but you get the idea. * It doesn’t have to be perfect I mean real burritos arent.IMG_5397 IMG_5400Afterwards I put a thin layer of frosting on the whole thing as a crumb coat.  I then put it back into the fridge. While the cake was back in the fridge I had rolled out some store bought fondant.  I colored the fondant by taking some chocolate frosting not using food coloring but it worked.  After the cake was in there for a while I took it out and frosted the cake smoothly.  Then I covered the cake with the rolled out fondant.  I added a little more colored to the fondant by smearing some more frosting onto it.  On the back end of the cake I wrapped it in real tin foil.IMG_5412I ripped the end of the fondant where the “inside ingredients” were going to come out so it looked like someone had bitten into it. To make the inside ingredients I used coconut as the cheese, green colored coconut as the lettuce (put some coconut in the ziplock with green food coloring & shake), raisins as the beans, & fondant for the corn, rice, & tomatoes. I made cream cheese frosting to look like the guacamole & sour cream. I frosted 2 cupcakes one colored one not. I used some of the frosting to help the ingredients stick to the edge of the cake under the fondant.

For the chips I used store bought pre-made pie crust.  I cut it into triangles & baked on 350. I stuck some in the cupcakes, put some on the side of the burrito & made some coming out of the bag I got at Chipotle. I did cut the bag so it was shorter.  (I did not get the chips bag that they actually use for the chips, I got the other bag.)IMG_5443He loved the cake & how real it looked.  I was happy I was able to make most of the cake edible.  The only things that were not were the napkins, tin foil, & the bag.  You can actually make edible looking tin foil but I opted out.chipotle cake LW

PEANUT BUTTER CHOCOLATE COVERED PRETZEL CUPCAKES

I WANTED TO MAKE MY FRIEND CUPCAKES & SHE LOVES PB & PRETZELS & OBVIOUSLY CHOCOLATE.  SO I PUT THEM ALL TOGETHER & MADE SOME CUPCAKES.

pb chocolate covered pretzel cupcakes pb chocolate covered pretzel cupcakes   TO MAKE THESE DELICIOUS CUPCAKES I STARTED BY MAKING SOME CHOCOLATE COVERED PRETZELS & PUTTING THEM IN THE FREEZER TO COOL.  ONCE THEY ARE COOLED YOU PUT 1 OR 2 AT THE BOTTOM OF THE CUPCAKE TIN.IMG_5168 IMG_5171I USED SIMPLE VANILLA BOX CAKE MIX FOR THESE CUPCAKES.  WHILE THEY WERE BAKING & COOLING I MADE SOME PEANUT BUTTER FROSTING.  WHAT YOU NEED: 1 1/2 STICKS BUTTER ROOM TEMP, 1 CUP CREAMY PEANUT BUTTER, 1 TSP VANILLA, 1/2 TSP SALT, 1 1/2 CUP POWDERED SUGAR & 1 1/2 TBSP MILK.  CREAM TOGETHER THEN BUTTER & PEANUT BUTTER.  THEN ADD THE MILK & SALT.  ONCE THAT IT ALL CREAMED ADD THE SUGAR LITTLE BY LITTLE.  ONCE THAT IT ALL MIXED IT WILL SEEM DRY, START ADDING SOME MILK TBSP BY TBSP.

FROST THE CUPCAKES & DECORATE WITH SOME MORE CHOCOLATE COVERED PRETZELS.  YOU CAN ALSO DRIZZLE THE CUPCAKES WITH CHOCOLATE TOO!chocolate covered pretzel pb cupcakesIMG_5184ALL I HAVE TO SAY IS YUM.  THANKFULLY I SAVED SOME FOR MYSELF & THEY DIDNT ALL GOTO MY FRIEND.  THEY WERE MY DINNER FOR THE NIGHT, I HAD 3!

METS/KNICKS CAKE

INSTAGRAM KNICK/METS CAKEIT WAS MY DADS BIRTHDAY & WHAT OTHER KIND OF CAKE TO MAKE HIM OTHER THEN A KNICKS/METS CAKE.  HE HAS BEEN A LOYAL FAN SINCE I COULD REMEMBER EVEN WHEN THEYVE MAYBE NOT BEEN THE BEST.

FOR THIS CAKE I MADE A KNICKS JERSEY WHICH HAD HIS AGE (OOPS SHOULD I HAVE NOT?) & HIS NAME.  THEN I MADE THE METS BASEBALL MASCOT MR.MET.

I SIMPLY BAKED A RECTANGULAR CAKE.  AFTER PUTTING IT IN THE FRIGE FOR A WHILE WHICH MAKES IT EASIER TO CUT I CUT OUT THE SLEEVES & THE TOP NECKLINE.  I DECORATE WITH FROSTING I HAD MADE & DYED & THE BLACK WAS A GEL I BOUGHT AT THE STORE.

FOR THE BASEBALL I MADE A LITTLE RICE KRISPIE TREATS & ROUNDED THEM INTO A BALL.  I THEN MADE SOME MARSHMALLOW FONDANT WHICH WAS EASY TO MAKE BUT I WOULD NEVER DO AGAIN.  I WOULD DEFINITELY BUT IT INSTEAD.  BUT FOR THE FONDANT YOU JUST SIMPLY NEED MINI MARSHMALLOWS & POWDERED SUGAR & FOOD COLORING IF YOU WANT TO COLOR IT.  GOOGLE MARSHMALLOW FONDANT IF YOU WOULD LIKE TO MAKE IT YOURSELF. I THEN COVERED THE RICE KRISPIE BALL.  I MADE A LITTLE NOSE WITH THE FONDANT AS WELL.

I ALSO MADE A FEW CUPCAKES WITH SOME EXTRA BATTER I HAD.  I HAD COLORED THEM MORE FOR FUN NOT AS MUCH FOR LOOKS.

IMG_1237EVEN THOUGH I WOULDNT GO AS FAR TO SAY THAT IT LOOKS PERFECT & PROFESSIONAL, MY DAD LOVED THE CAKE & WAS HAPPY WHEN I SURPRISED HIM WITH IT.  ALWAYS REMEMBER THAT EVEN IF YOUR WORK ISNT AS PERFECT AS YOU WOULD LIKE, EVERYONE WILL STILL LOVE & APPRECIATE IT!
