Smore’s Brownies

IMG_3851Ok so a lot of things I make are completely from scatch but that doesn’t mean I don’t cheat sometimes. Now I like brownies but there not my favorite thing, BUT these were pretty amazing not going to lie. The nice thing about these are that if you are going to bake for holiday party, you kids birthday or so on, even though they aren’t completely homemade 1. no one has to know & 2. atleast you added a little special twist to the normal brownie to make them even better and 3. way better then just buying something already made at the store or just bringing brownies that are clearly straight from the box mix. A little effort can go a long way.

What do you need?

DARK chocolate brownie mix (dark chocolate comes out wayyyy better then any other kind) Semisweet chocolate morsels Mini Marshmallows, graham crackers, butter & sugar

How do you make these?

First make the graham cracker crust.  It’s really simple. Crush up 1-1/2 cups (24 squares) of graham crackers. If you put it in a zip lock you  can easily crush them.  Melt 1/3 cup butter, then in a small bowl mix the graham crackers, melted butter and 1/4 cup sugar. After spraying the brownie pan press the graham cracker crust into the pan with not too much pressure.  You can decide however thick you would like your crust to be.  I then put the pan in the over that should be preheated to 325-350 (whatever the brownie box says) for 2-3.

Make the brownies how you would make any other brownies.  I personally like my brownies to be kinda gooey so I normally put the brownies in about 7-10 minutes less check on them with a toothpick & decide how much longer they really need. I take them out when there still gooey but the edges are more cooked.  Pour the brownie mix over the graham cracker & cook.

Once you take them out throw on the chocolate chip morsels all over the top.  They will probably start melting right away because of the heat.  Then I topped them with mini marshmallows & threw the pan back in the oven on broil until they were brown.  BE CAREFUL & WATCH them because they can burn very easily. You can use big marshmallows if you would like.  I hope you enjoy these as much as I did.IMG_3832

American Globs

all things yummyMy Big Gay Ice Cream Shop is an ice cream place in New York City.  I had seen pictures of there ice cream & couldn’t wait for the day I got to try it.  Now I am in LOVE with dessert.  I have a list (in my head) of all the places I MUST try & slowly I knock them off.  This was defintely on the list & I am happy I got a chance to have it because it was amazing.  It stinks when I am so excited to try something & it is a let down but this was defintely not that.  I always try to go back but it hasn’t happened yet but I know one day soon I will be visiting it again.

They have a menu of a handful of different prepame cones they have.  I choose the American Glob & it was a good choice. This ice cream cone consists of vanilla ice cream, pretzels, sea salt & a chocolate dip.  When I saw her sprinkling the sea salt I was getting nervous at first that I would not like it.  It turned out to be the perfect sweet & salty.  Normally I wouldn’t want a mix but if its going to be this perfect then I am all in.

The first picture shows what it looks like freshly dipped and yes you use a spoon to eat it. I then took another once the chocolate hardened. Just looking at these pictures again is making my mouth water.all things yummy

PEANUT BUTTER CHOCOLATE COVERED PRETZEL CUPCAKES

I WANTED TO MAKE MY FRIEND CUPCAKES & SHE LOVES PB & PRETZELS & OBVIOUSLY CHOCOLATE.  SO I PUT THEM ALL TOGETHER & MADE SOME CUPCAKES.

pb chocolate covered pretzel cupcakes pb chocolate covered pretzel cupcakes   TO MAKE THESE DELICIOUS CUPCAKES I STARTED BY MAKING SOME CHOCOLATE COVERED PRETZELS & PUTTING THEM IN THE FREEZER TO COOL.  ONCE THEY ARE COOLED YOU PUT 1 OR 2 AT THE BOTTOM OF THE CUPCAKE TIN.IMG_5168 IMG_5171I USED SIMPLE VANILLA BOX CAKE MIX FOR THESE CUPCAKES.  WHILE THEY WERE BAKING & COOLING I MADE SOME PEANUT BUTTER FROSTING.  WHAT YOU NEED: 1 1/2 STICKS BUTTER ROOM TEMP, 1 CUP CREAMY PEANUT BUTTER, 1 TSP VANILLA, 1/2 TSP SALT, 1 1/2 CUP POWDERED SUGAR & 1 1/2 TBSP MILK.  CREAM TOGETHER THEN BUTTER & PEANUT BUTTER.  THEN ADD THE MILK & SALT.  ONCE THAT IT ALL CREAMED ADD THE SUGAR LITTLE BY LITTLE.  ONCE THAT IT ALL MIXED IT WILL SEEM DRY, START ADDING SOME MILK TBSP BY TBSP.

FROST THE CUPCAKES & DECORATE WITH SOME MORE CHOCOLATE COVERED PRETZELS.  YOU CAN ALSO DRIZZLE THE CUPCAKES WITH CHOCOLATE TOO!chocolate covered pretzel pb cupcakesIMG_5184ALL I HAVE TO SAY IS YUM.  THANKFULLY I SAVED SOME FOR MYSELF & THEY DIDNT ALL GOTO MY FRIEND.  THEY WERE MY DINNER FOR THE NIGHT, I HAD 3!

S’MORE PB & CHOCOLATE BIRTHDAY CUPCAKE

EVERY YEAR SINCE ELEMENTARY SCHOOL, FOR MY BEST FRIENDS BIRTHDAY I HAVE SOME HOW INCORPORATED FOOD INTO HER PRESENTS UNKNOWINGLY. (WE FIRST REALIZED THIS ABOUT 4 YEARS AGO) NOW I PURPOSELY BAKE SOMETHING FOR HER OR GET HER SOMETHING FOOD RELATED TO KEEP UP WITH THE TRADITION.

FOR HER BIRTHDAY LAST YEAR I MADE CUPCAKES OF HER FAVORITE THINGS.  NUMBER 1 FAVORITE THING IN THE WHOLE ENTIRE WORLD ARE HER DOGS.  SHE COULD BE AN OBSESSIVE DOG LADY.  THEN PEANUT BUTTER.  WE LOOOVE REESES. SO I MADE PB REESES CUPCAKES.  LASTLY I MADE PLAIN VANILLA CHOCOLATE CUPCAKES BECAUSE SHES ALWAYS LOVED THEM.

birthday cupcakes LWFOR THE SMORES CUPCAKES I MADE A GRAHM CRACKER CRUST ON THE BOTTOM OF THE LINED CUPCAKE TIN. I CRUSHED UP 1 1/2 CUPS GRAHAM CRACKERS AND MIXED THE CRUMBS WITH 4 TBSP BUTTER & 1/4 CUP SUGAR. (YOU CAN ADJUST THE SUGAR TO YOUR LIKING) BAKE THE CRUST FOR 5 MINUTES AT 350 BEFORE YOU FILL THE CUPCAKE TIN WITH ANY BATTER.  I MIGHT OF KIND OF CHEATED THIS TIME AROUND & USED BOX VANILLA MIX. I FILLED THE TINS UP AFTER THE CRUST CAME OUT OF THE OVEN.  I BAKED THEM AS I WOULD WITH ANY OTHER CUPCAKES.

WHEN THE CUPCAKES DONE & COOLED I MELT SOME CHOCOLATE CHIPS IN A CUP & FROSTED THE CUPCAKES WITH SOME.  NOW THIS ISNT THE FROSTING SO YOU DONT NEED TO PUT A HUGE MOUNTAIN OF CHOCOLATE UP BUT HOW MUCH YOU WANT IS TOTALLY UP TO YOU.  NOW FOR THE MARSHMALLOW PART OF THE S’MORE YOU CAN EITHER JUST FROST WITH FLUFF OR MAKE MARSHMALLOW FROSTING LIKE I DID. TO MAKE MARSHMALLOW FROSTING YOU NEED: 1 CUP BUTTER ROOM TEMPERATURE 7 OUNCES MARSHMALLOW FLUFF 1-2 CUPS CONFECTIONERS SUGAR (TO YOUR TASTE) 1 TSP VANILLA. BEAT THE BUTTER & POWDERED SUGAR TIL FLUFFY. THEN MIX IN FLUFF & VANILLA. FROST OVER THE CHOCOLATE. THE LAST STEP IS TO TAKE SOME MINI MARSHMALLOWS & BROIL ON TIN FOIL IN THE TOASTER OVER UNTIL LIGHTLY BROWN.  THEN SIMPLY LIFT THEM OFF THE TIN & PLACE ON THE CUPCAKE.SMORE CUPCAKEYOU CAN DO OTHER VARIATIONS OF A S’MORE CUPCAKE LIKE MARSHMALLOW FROSTING CHOCOLATE DRIZZLED ON TOP & A GRAHAM CRACKER STUCK IN THE TOP.  OR MARSHMALLOW FROSTING SPRINKLED WITH GRAHAM CRACKERS & A PEICE OF HERSHEYS STUCK INTO THE TOP.  THERE ARE MANY VARIATIONS BE CREATIVE.

FOR THE DOG CUPCAKES & THE REESES CUPCAKES I USED THE SAME VANILLA CUPCAKES.  I MADE PB FROSTING.
WHAT YOU WILL NEED FOR PB FROSTING:1 CUP CONFECTIONERS SUGAR 1 CUP CREAMY PEANUT BUTTER, 5 TBSP BUTTER ROOM TEMP, 3/4 TSP VANILLA 1/4 TSP SALT & 1/3 CUP HEAVY CREAM. MIX EVERYTHING BUT THE HEAVY CREAM.  ONCE THAT IS ALL MIXED ALL THE HEAVY CREAM. FROST. THEN TAKE REESES & CRUMBLE THEM UP INTO THE SIZE YOU WOULD LIKE & DECORATE WITH THEM.FOR THE DOG CUPCAKES I MADE A PIPING BAG FROM A ZIPLOCK & SNIPPED THE EDGE.  I JUST PIPED POINTS COMING UP FROM THE CUPCAKE.  FOR THE NOSE AREA I DID TAKE A LITTLE DOLLOP OF FROSTING FIRST & PIPED OVER IT SO IT WOULD BE RAISED.(YOU COULD ALSO BUT A LITTLE PEICE OF REESES AND PIPE OVER THAT TO ADD SOME HEIGHT AS WELL) FOR THE TOUNGE I CUT GYM WITH SCISSORS, I USED A RASIN FOR THE NOSE, LITTLE PEICES OF REESES FOR THE EYES & HALVES OF REESES FOR THE EARS.

CHOCOLATE FESTIVAL

IMG_1261IF THERES SUCH A THING AS HEAVEN WHILE YOUR LIVING THIS IS IT.  I VISITED HEAVEN. THERE WAS A 10 DAY CHOCOLATE FESTIVAL IN FLORENCE WHILE I WAS THERE & TRUST ME I WENT AS MUCH AS I COULD.  THE ONLY DAYS I THINK I MISSED WERE WHEN I WASNT IN FLORENCE.

SO BASICALLY ITS A MILLION BOOTHS WITH ALL CHOCOLATE.  THEY GIVE YOU TESTERS OR YOU ASK FOR A TRY BECAUSE OBVIOUSLY YOU WANT TO BUY IT (YEAH RIGHT) BY THE END OF THE FESTIVAL MY BEST FRIEND & I ALEXANDRA KNEW THE BOOTHS TO GOTO FOR THE GOOD TESTERS WHICH WERE BIG.

IT WAS LIKE A FUGE TYPE SITUATION EXCEPT IT MELTED IN YOUR MOUTH & HAD A SOFTER CONSISTENCY.  BELOW IS A PICTURE OF THE TWO TONED DELICIOUSNESS.IMG_1225

ONE BOOTH THAT WAS AMAZING & I ACTUALLY BOUGHT STUFF FROM WAS A MAKE YOUR OWN CHOCOLATE TYPE THING.  THERE WERE 3 DIFFERENT CHOCOLATE CUPS TO CHOOSE FROM MILK.DARK. WHITE & THEN A FEW DIFFERENT CHOCOLATE SAUCES I GUESS YOUD CALL IT TO PUT IN.  THERE WAS A CARMEL FLAVOR, MILK, WHITE, DARK 1 OR 2 OTHERS.  WOW THIS WAS AMAZING.  IT WAS 1 EURO & 1 BITE.  IT WAS SOOO GOOD. I BOUGHT AT LEAST 4 OVER THE TIME OF THE FESTIVAL.

IMG_1215 251527_10151487991831800_88964722_nANOTHER BOOTH I HAD TO BUY SOMETHING AT WAS THE WAFFLE STICK THAT GOT COVERED IN CHOCOLATE & SPRINKLED WITH SPRINKLES.  SOME BACK STORY, I HAVE A SICK OBSESSION WITH WAFFLES & ICE CREAM FROM THIS ONE ICE CREAM PARLOR BY MY GRANDMA.  I ALSO TEND TO GET WAFFLES & ICE CREAM FROM THE DINER A BUNCH SO WHEN I SPOTTED THIS BOOTH, I MADE A STRAIGHT RUN FOR IT.IMG_1251CAN YOU SAY YUM. BELOW IS A PICTURE OF ME CHOWING DOWN ON IT WITH MY FRIEND WHO PARTICIPATED IN THIS WAFFLE & CHOCOLATE EATING AS WELL.561506_10151487996166800_2081444985_n 556355_10151487996981800_963560677_nNOW THS IS WHERE IT GETS EMBARASSING.  I DO THIS THING WHERE WHEN I LIKE SOMETHING A LOT I GET KINDAAA OBSESSIVE.  LIKE I NEED IT EVERYDAY.  NOW AT HOME I AM NOT A BIG CANOLI PERSON ID OPT TO CHOOSE SOMETHING BEFORE THAT.  NOW IN FLORENCE, DIFFERENT STORY.  THANKFULLY WHEN WE GOT TO THE BOOTH WITH THE CANOLIS THEY GAVE OUT TESTERS OF A LITTLE PIECE OF CANOLI SHELL DIPPED IN SOME CREAM.  OMG YUM.  CAN I SAY YUM AGAIN, YUM.  I WAS HOOKED AT FIRST BITE.  IF YOU TOOK MY WHOLE LIFE & ADDED UP HOW MANY CANOLIS IVE EVER EATTEN IT WOULD BE LESS THEN HOW MANY I ATE IN DURING THE LENGTH OF THE FESTIVAL.  THE GUY KNEW ME (THATS THE EMBARASSING PART) ITS EVEN MORE EMBARASSING BECAUSE ITS NOT LIKE IT WAS OVER A MONTH OR SO HE GOT FAMILIAR WITH ME, LIKE NO I WENT THAT MUCH IN 10 DAYS.

THE ORIGINAL WHICH IS SEEN ABOVE IN ALL THE PICTURES, THE PISTACHO ONE & THE ALMOND ONE.

IMG_1370 IMG_1371WHEN THE FESTIVAL WAS OVER I WAS SAD TO SEE MY CANOLI GUY GO.  I DID GET 1 FREE CANOLI OUT OF HIM, I MEAN I WAS THE BEST CUSTOMER (HE ACTUALLY TOLD ME THAT)

ANOTHER GREAT BOOTH WAS A CHOCOLATE BARK BOOTH.  MY FAVORITE WAS THE CHOCOLATE COCONUT BARK.  THERE WERE PLENTY TO CHOOSE FROM & THEY LOVED GIVING TESTERS OUT.  THEY BASICALLY FORCED THEM ON YOU WHICH I AM NOT OPPOSED TO BY ANY MEANS.

SOME OTHER BOOTHS THAT COULD BE FOUND WERE A CHOCOLATE LIQUOR BOOTH, FRESH DOUGHNUTS & OTHER PASTRIES, FRESH STRAWBERRIES CUPS WITH CHOCOLATE & HOT CHOCOLATE.

DRUNK BARBIE CAKE

IMG_2771I THINK THE IDEA OF THIS CAKE WAS CREATED SPECIFICALLY FOR MY BEST FRIEND.  THIS CAKE NEEDED TO BE MADE FOR HER.  ITS FUNNY THOUGH, WE WENT TO AC FOR HER BIRTHDAY & SHE MADE IT DOWNSTAIRS, JUST NOT OUT OF THE HOTEL.  BASICALLY SHE WAS BARBIE.

DRUNK BARBIE CAKE

I MADE A SIMPLE BOX CAKE, I NEVER USE CANNED FROSTING (IT GROSSES ME OUT) BUT OF COURSE YOU CAN TO MAKE THE BASE OF THE CAKE.  MINE WAS TWO LAYERS WITH SOME CHOCOLATE FROSTING IN BETWEEN. IT CAN BE ROUND, SQAURE WHATEVER PAN YOU HAVE.

I BOUGHT A FEW MINI ALCOHOL BOTTLES (NOT ALL MADE IT ONTO THE CAKE, SOME JUST GOT THROWN IN THE PRESENT BAG) TO ADD TO THE CAKE.  IN HINE SIGHT I WISH I HAD JUST MADE A LARGE RECTANGULAR CAKE SO I COULD OF FIT EVERYTHING ON IT BETTER, BUT YA LIVE & YA LEARN & SHE LOVED IT HOW IT WAS ANYWAYS.

BACK TO MAKING THE CAKE. I PLACED A MARGARETTA GLASS ON THAT I GOT AT PARTY CITY & THREW SOME SPRINKLES IN TO USE AS THROW UP.  SHE HAS PRETTY GOOD LOOKING THROW UP.

I THEN TOOK THE BARBIE PUT HER HAIR IN A BUN (THE ULTIMATE I NEED TO THROW UP GIRLS HAIRSTYLE).  I THEN TOOK SOME FROSTING A LIGHTLY SMEARED SOME ON THE MOUTH AREA SO I COULD STICK A FEW SPRINKLES ON. I UNDID THE VELCRO ON THE DRESS TO MAKE HER SEEM A MESS BUT THIS DRESS WAS A LITTLE AKWARD. I PUT A LITTLE CHOCOLATE FROSTING ON THE DRESS AS WELL CAUSE WELL SHES MESSY. I RUBBED A LITTLE BLACK EYE SHADOW UNDER HER EYES AS WELL.  LASTLY, I TOOK ONE SHOE OFF TO PLACE ELSEWHERE ON THE CAKE.

I PLACED THE BARBIE ON THE CAKE AS IF SHE WAS THROWING UP INTO THE GLASS.

TO MAKE THIS  CAKE A LITTLE SPECIAL, I ADDED SOME CANDY AROUND THE SIDES.  INSTEAD OF BUYING A BUNCH OF DIFFERENT BAGS OF CANDY I WENT TO THE LOCAL FROZEN YOGURT STORE & MADE A CUP OF TOPPINGS.  (WHATEVER IF THEY THINK IM CRAZY) I STUCK THE CANDY ON THE SIDES, STUCK THE CANDLES IN & DONE.

DRUNK BARBIE CAKEIT IS AN EASY WAY TO MAKE YOUR FRIENDS 21ST BIRTHDAY CAKE A LITTLE MORE MEMORABLE.  ITS ALSO A GOOD INDICATOR OF WHAT LATER THAT NIGHT IS LIKELY TO LOOK LIKE.  BE SAFE, HAVE FUN, & EAT SOME CAKE.
