SPICY SPINACH-PUMPKIN SEED PESTO

I LOVE PESTO.  IT CAN GO ON MANY THINGS.  THIS PESTO IS A LITTLE DIFFERENT BECAUSE 1. IT IS SPICY & 2. IT USES PUMPKIN SEEDS INSTEAD OF THE REGULAR PINE NUTS.  PINE NUTS ARE EXPENSIVE SO THIS DID SAVE SOME MONEY BUT THAT IS NOT WHY I USED THEM. ITS JUST A EXTRA BENEFIT TO THE ALREADY HOMEMADE GREAT TASTE.

TO MAKE THIS PESTO YOU NEED : 1 CLOVE OF GARLIC 1 SEEDED JALAPENO 1/2 CUP TOASTED PUMPKIN SEEDS 1/3 CUP GRATED PARMESAN JUICE & ZEST FROM 1/2 A LEMON 1/2 TSP SALT 1/2 TSP PEPPER 1 CUP BABY SPINACH 1/2 CUP LOOSELY PACKED FLAT LEAF PARSLEY 1/2 CUP OLIVE OIL

BEFORE YOU PUT THE WHOLE JALAPENO IN DONT.  FIRST OFF YOU CAN BUY THEM IN DIFFERENT SIZES & EVERYONE DOESNT LIKE THE SAME AMOUNT OF SPICE.  START OFF BY PUTTING SOME IN & AT THE END WHEN YOU TASTE IT YOU CAN ALWAYS ADD MORE BUT YOU CAN NEVER TAKE OUT.

TO BEGIN PUT SOME OIL IN A SKILLET & TOAST THE PUMPKIN SEEDS.  IT ONLY TAKES A FEW MINUTES.

IMG_5269IN A FOOD PROCESSOR COMBINE THE GARLIC JALAPENO TOASTED PUMPKIN SEEDS GRATED PARMESAN LEMON JUICE &  ZEST SALT & PEPPER & PULSE TO COMBINE.

spicy pumpkin seed pesto lwTHEN ADD THE BABY SPINACH & PARSLEY & PULSE UNTIL ROUGHLY CHOPPED.   THEN WHILE THE MOTOR IS RUNNING ADD THE OLIVE IN A THING STREAM.  TASTE & YOU CAN ADD MORE JALAPENO IF YOUD LIKE. * YOU CAN STORE THIS IS THE FRIDGE FOR UP TO 2 WEEKS.
