EGG TOPPED PITA PIZZA

PITA PIZZA IS SOMETHING THAT I HAVE KNOWN ABOUT FOREVER.  WHEN I WAS LITTLE I HAD MADE REGULAR ON PITA AT MY FRIENDS HOUSE.  ITS SIMPLE & EASY.

NOW THAT IM OLDER I HAVE TAKEN PITA PIZZA & PUT TWISTS ON IT.  FOR LUNCH YESTERDAY THIS COULD BE FOR DINNER AS WELL I MADE EGG TOPPED PITA PIZZA.

ON THE PITA I PUT SPICY PESTO, BABY SPINACH, COLBY-JACK CHEESE & EGG.  THE PESTO WAS HOMEMADE & YOU CAN FIND THAT RECIPE ON THE POST BEFORE THIS.

FOR THIS RECIPE YOU NEED: 2 TSP EXTRA VIRGIN OLIVE OIL 3 CUPS BABY SPINACH STEAMS REMOVED (YOU CAN CHOP IT BUT YOU DONT NEED TO) 1/2 TSP KOSHER SALT 1/2 TSP GROUND BLACK PEPPER 3 TBSP PESTO (SUCH AS THE SPICY PUMPKIN SEED PESTO) 2 WHOLE GRAIN PITAS 1/2 CUP SHREDDED MONTEREY JACK CHEESE (I USED A PACKAE OF COLBY-JACK) & 2 EGGS.

I MADE ONLY 1 SERVING SO I HALVED THE RECIPE.

PREHEAT THE OVEN TO 425 DEGREES.  IN A SKILLET OVER MEDIUM HEAT ADD A DROP OVER OIL THE BABY SPINACH SALT & PEPPER. COOK UNTI WILTED ABOUT 3 MINUTES. SET ASIDE.

ON A SPRAYED BAKING SHEET PUT THE PITA.  SPREAD 1 1/2 TBSP PESTO OR AS MUCH AS YOU WOULD LIKE.  TOP EACH WITH THE SPINACH & 1/4 CUP CHEESE.  MAKE A LITTLE WELL IN THE MIDDLE & GENTLY CRACK 1 EGG.  DRIZZLE SOME MORE PESTO ON TOP IF YOU WOULD LIKE.  BAKE UNTIL THE EGG WHITES ARE SET BUT THE YOLK IS STILL LOOSE ABOUT 10 MINUTES.  CUT INTO SLICES & SERVE.
