LEMON HONEY QUINOA WITH VEGETABLES

QUINOA CAN BE PUT WITH SUCH A VARIETY OF DIFFERENT INGREDIENTS.  RECENTLY IVE BEEN REALLY WANTING TO MAKE  A QUINOA DISH, SO I DID. I ONLY MADE ABOUT 1 BIGGGG SERVING BUT HERES THE RECIPE DOUBLED

TO MAKE THIS RECIPE I MADE A LEMON HONEY DRESSING: YOU NEED 1 TBSP LEMON ZEST 2 TBSP LEMON JUICE 1 1/2 TBSP HONEY 1 GARLIC CLOVE MINCED 1/2 TSP SALT & 1/2 TSP PEPPER JUST COMBINE & WHISK THE INGREDIENTS

FOR THE QUINOA: YOU NEED 1 CUP CHICKEN STOCK (YOU CAN USE VEGETABLE) 1 CUP QUINOA RINSED & DRAINED 1 TBSP EVOO 2 CLOVES OF GARLIC MINCED 1 ZUCCHINI SLICED 2 EARS OF CORN OF THE COB 2 GREEN ONIONS SALT PEPPER 1 TOMATO CHOPPED 1/2 CUP FETA CHEESE 2 TBSP CHOPPED BASIL

THE LAST TIME I MADE THIS I DID JUST USE CANNED WHOLE KERNEL CORN & FROZEN ZUCCHINI

START BY BRINING THE CHICKEN STOCK TO A BOIL IN A SAUCE PAN, ONCE BOILING ADD THE QUINOA PUT THE LID ON & LET SIT FOR ABOUT 25 MINUTES ON MED/LOW HEAT OR UNTIL THE CHICKEN STOCK IS ABSORBED & QUINOA TENDER.  YOU CAN ALSO ADD MORE IF YOU FEEL IT IS NEEDED. FLUFF THE QUINOA WITH A FORK & LET IT COOL A LITTLE.

WHILE THE QUINOA IS COOKING YOU CAN CHOP THE VEGETABLES AND/ OR MAKE THE DRESSING OR BEFORE.

HEAT THE OIL IN A LARGE SKILLET OVER MEDIUM HEAT THEN ADD THE GARLIC UNTIL GOLDEN.  THEN ADD THE ZUCCHINI CORN GREEN ONIONS SALT & PEPPER. SAUTE TIL JUST TENDER MAYBE 3 MINUTES. ADD THE COOKED QUINOA HALF THE DRESSING FETA CHEESE BASIL & TOMATO.  THEN PLATE & EAT!
